我们家小洛为数不多的拿手厨艺。 :lol:

原料(两人份):
意大利米1.4杯,我们家用的是浅黄色半透明的aborio extra(如下图),这是最好的意大利米了(好是真好,贵也真贵 :p ),如果没有,用carnaroli也行,实在没有,再次一等aborio。

白葡萄酒半杯,不能用红葡萄酒(一加热会有沉淀,特别难看),不能用白酒(酒精太多,没有鲜味),更不能用料酒。不过这白葡萄酒不用太好,甜一点也没关系,但别用有酸味的。如果舍得,开上一瓶好的Pinot blanc,半杯做菜,剩下的佐餐,当然是最好不过了。我们用的是Chasselas。

两个大番茄(小的话3-4个就好)去皮,切块。番茄种类很多。我们是用的这种tomate grappe,味道比较浓。没有的话,用别的也成,只要不是没有番茄味道的便宜超市货就行了。

橄榄油(这个在欧洲实在太普遍了,个人建议用意大利的,其他地方的的不是不好,只是用来做risotto总觉得差那么一点),盐,黑胡椒末,香葱末少许,paprika(不辣的就行了,主要用来着色),新鲜九层塔(basil,basilic)叶子少许,生抽,花椒末。我们家的厨房向来中西结合,正宗的西餐是不会用后两者的。但是只要滋味好,why not?

做法:
锅(我用的是平底铸铁大煎锅)里加适量橄榄油(和平常炒菜差不多,不用太多),烧到7成热,放入米翻炒2-3分钟,加番茄,翻炒到番茄出较多的汁水,加白葡萄酒,煮上2分钟。然后加入两倍于米量的水,放盐适量(不要太咸),生抽,花椒末、胡椒末、paprika少许,一小撮香葱末。盖上盖子煮30分钟左右,其间不时搅拌使受热均匀,直到米粒变软(这个时间依米的种类而定,aborio extra比较坚强,时间稍长一点,其他的20-25分钟就好了,以个人口味为准),加入剩下的香葱末,再加热1分钟就好。装盘,等表面稍凉放上生的九层塔叶子(别放得太早,否则叶子受热变黑就难看了)。大功告成!

味道:汁浓味美,鲜香可口,略带番茄酸味,米饭软中有硬,富有嚼头,极适合春末夏初。建议搭配:椒盐鸡腿/白灼大虾/清蒸鱼,白灼芦笋等清淡一点的食物,白葡萄酒。单吃的话加点parmesan也很可口。 :f59:

惹得我今晚想吃番茄炒蛋,然后用汁捞饭了。――小钧夫婿这么复杂的手艺我是不会尝试的,不是糊了就是干锅的说。

咦,做risotto不是得不停的搅那锅米吗,这样才能让淀粉慢慢渗入到汁了变得又稠又滑溜的。 不过这样也挺好的,简单多了看着也挺好吃。我听厨子说意米没有用日本sushi米也很好。

哎,我上星期刚做了一次,烟肉蘑菇的,不停翻搅的,搅得我 :gros_yeux_tristes: 。完了人家还说“稠糊糊的,texture不好。” :f28:

我更愿意做糯米饭,如果需要翻炒那末多次,还不放别的佐料的话。

可不是,这得不停得加鸡汤不停得搅,力气活儿啊。而且吃力不讨好,时间稍长点就煮软了不好吃了。 我上周做polenta也是搅了半天,胳膊都酸了。 不过最省事的是真空包装的gnocchi, 比意粉好吃(当然不是一回事儿)而且煮的比意粉快,两三分钟就了事。 :-D

加水以后煮的时候是得不时搅拌,但还不至于得不停手的地步。要是熟练工的话,还可以同时做点别的菜。我一直觉得东北大米圆圆胖胖的,应该也可以做risotto,不过没试过。sushi米多贵啊!

我觉得生炒糯米饭挺费事,配料都得切丁,糯米还得事先浸好,最重要的是,那都是我的事。 :dog001:

我周末看了个厨师爱情片,讲一严谨的女厨如何被一意大利男厨感化了。 片子粉有些公式化, 不过当人家琅琅上口卷舌说了声basilico, 哗,真是唤起了意大利灿烂阳光铜色土地橄榄树葡萄枝的图面。 比咱叫basil有味道多了。
我忍不住去查了下飞机票,哗,贵得惊人。 :f22:

Oh yeah! Now I remembered, it is the same actress! I saw Almost Matha so long ago, I did not remember.

You know what's really funny( in a stupid Paris Hilton way)? I went to see "Black Book" 2 weeks ago, a Dutch movie about Holland near the end of WW2. In the movie, the jewish girl dyed her hair blonde and met a Nazi commander on the train. I was like ...hey, the Nazi commander looked cute, and somehow familiar. My friend reminded me that was the playwriter from Life of the Others. I was like: "Oh, no wonder. But he is German actor, why is he in a Dutch movie?" My friend cracked up: "Well, because he was playing a German here?"

在Florence的时候,从米来朗其罗广场下山来,几家餐馆门口有巨型的basil盆栽种在大陶盆里,那种甜香真是醉人。

说起来JUN好几天不见,大概去玩儿了。

Jun is out having fun for sure, probably sunbathing off the Meditteranean now. Oh wait, she doesn't like that, more likely she is in some museum starring at beautiful naked stone torsos. :wavy:

哪天我有空再学外语,一定是意大利语,那种韵律真是迷人。跟同事写邮件和消息的时候,也喜欢加点ciao啦,grazie,momento,perfecto之类的洋泾浜意大利话,自以为其乐无穷 :mrgreen:

OMG, it is so f__king trashy I can't believe it. I lost all my respect for Dutch film industry for a hour before finding out it was from the same director of Basic Instinct and Showgirl. Man, I should have known from the obvious never changed taste for busty leggy blonde :mrgreen:

Yeah, I spent 6.5 hours in Prado. Haven't had that kind of cramming since my college days. Went in the towers of Sagrada Familia and ... almost threw up. :vomit:

Just returned a few hours ago.

Actually it's been pretty cold in Barcelona and Madrid. Sevilla was hot.

Seeing it in real life, S.F. isn't as bad as I thought, but I still think it's too elaborate. In comparison, Casa Mila and Casa Batllo are a lot more manageable. I think he got so obsessed with SF that he just got carried away. OTOH, the later design (the Passion Fascade) is totally wrong.
